To prep, brown the ground sausage and drain off any fat. Rough chop the shredded collard greens.
Add all ingredients to the crock pot and cook until melted and creamy. Stir occasionally after cheeses begin to melt to mix ingredients and help the cheeses further melt.

If collard greens aren't your thing, try baby spinach instead!Instead of Velveeta, add ⅓ cup of beef broth and use 7-8 ounces of grated gouda (smoked gouda, if you can!) for a real cheese experience!
